Banana Nut Muffins

This recipe offers all the nutty, sweet flavor of a traditional banana nut muffin but none of the gluten or dairy. The bananas offer lots of potassium, vitamin B6, manganese, and copper.

Instructions

Step 1
Preheat oven to 350 degrees. Prepare a 12 cup muffin tin with baking cup liners or nonstick cooking spray
Step 2
In a large bowl, combine bananas and baking soda. allow the mixture to sit for at least 2 minutes
Step 3
Stir melted butter into the banana mixture. Stir in sugar, salt, eggs, and vanilla extract
Step 4
Mix in flour and cinnamon. Stir in walnuts
Step 5
Scoop batter into prepared muffin tin. Bake for 20 minutes or until a toothpick inserted comes out clean. Place muffin tin on a cooling rack and cool for 2 minutes. Remove muffins from tin and place on rack to finish cooling. Store in an airtight container at room temperature for up to 3 days.
