¼ cupchia
egg substitute made with coconut water - 2 eggs
1 cupcoconut water
3 cupsoats
1 ½ cupscorn chex
1 cup coarse ground
1 ½ cupsrice chex
¾ cuphemp protein powder
1 cupdried dates
1 cupdried figs
½ cupagave
¼ cuphoney
2 Tbsmolasses
1 cuppeanut butter powder
3/4 cup coffee and 1 cup PBfit powder
¾ cupcoffee
2 Tbsvanilla extract
1 Tbscinnamon
1 tspsea salt
½ cupmini chocolate chips
½ cupshredded coconut
¾ cupmaltodextrin
Instructions
Step 1
Make egg substitute with coffee/espresso and chia seeds. Let bloom.
Step 2
Mix oats, cereal and protein powder in food processor.
Step 3
Chop or pulse dried fruit
Step 4
Mix ingredients together, saving the chocolate chips and coconut for last.
Step 5
I used a 1/2 ounce scoop to portion, rolled into balls and patted out by hand. Bake at 350 for 15-20 minutes (think cookies). I used parchment paper to ease clean up.
