Instructions
Step 1
Preheat your oven to 180°C.
Step 2
Rub an oven proof dish with one teaspoon of oil.
Step 3
Whisk your eggs together in a bowl with your mixed herbs.
Step 4
Add the chopped broccoli, sliced courgettes, red pepper, onion and spinach to the bowl with the remaining extra virgin olive oil and mix well.
Step 5
Add all the ingredients to your pre-oiled dish and bake in the oven for around 40 minutes, until cooked through and starting to brown on top.
Step 6
Allow to cool slightly before you transfer to a plate, slice and serve.
Step 7
Add some chilli flakes if you fancy a little kick!
