Are you ready for healthy nutter butters? (🤫 They are entirely gluten free and vegan too!) Find the full written recipe on www.thesimplesprinkle.com/healthy-nutter-butter-recipe ✨Dry ingredients✨ * ž cup plantain flour (100g) * ½ cup almond meal, or almond flour (45g) * Âź cup cassava flour (40g) * Âź cup tapioca flour (35g) * 2 tablespoon cane sugar* * 1 teaspoon baking powder * A pinch of salt ✨Wet ingredients✨ * ⅔ cup maple syrup (180ml) * Âź cup natural peanut butter (70g) * 1 tablespoon avocado oil, or other vegan oil of choice * 1 teaspoon vanilla extract, or fresh vanilla ✨peanut butter filling✨ * ½ cup chilled all-natural peanut butter (120g) * sweetener of choice, optional 👩🏼‍🍳 How-to 👩🏼‍🍳 •Preheat your oven to 355°F / 180°C while you prepare the cookies.
• In a large bowl, combine dry ingredients. Then add your wet ingredients. Stir until combined and smooth. Cover and let it rest in the fridge for 10 minutes.
• Scoop into dough balls. Roll into a sausage shape, press flat, and then thin the middle creating the typical nutter butter shape. Score with a fork to create a hatch pattern.
• Bake for 12 to 15 minutes, or until lightly golden brown and allow to cool fully before filling. Cookies will firm up once cooled, so don’t be alarmed if they seem softer at first.
• Spread a spoonful of peanut butter between two cookies to create a sandwich. If you’d like it sweeter you can mix the peanut butter with some sweetener such as maple syrup. However, I personally think the cookies are sweet enough on their own. Enjoy! • • • • • •
