Ingredients

910gboneless skinless chicken breasts
6 small or 3 large, cut in half
200gshredded pepper jack cheese
½ cuproasted green chiles
chopped
kosher salt
¼ tspfreshly ground black pepper
crust
½ cuppretzels
coarsely crushed
pepper Jack
shredded
cheese
2gMexican Seasoning Mix
or taco seasoning
¼ tspkosher salt
½ tspfreshly ground black pepper
Instructions
Step 1
Preheat the oven to 400°F and arrange an oven rack in the center of the oven. Line a rimmed baking sheet with foil and lightly spray with oil. Cut a slit in the side of each chicken breast, forming a pocket.
Step 2
To make the filling, stir together the cheese, green chiles, salt and pepper in a small bowl. Stuff the filling into the chicken pockets, using all the filling. Place the stuffed chicken breasts on the greased baking sheet, pressing the edges of the chicken as closed as possible. Use toothpicks to more fully close the chicken, if desired.
Step 3
To make the crust, stir together the crushed pretzels, cheese, Mexican seasoning, salt and pepper. Press the crumbs onto the top and sides of each stuffed chicken breast. Lightly spray the crumb-coated chicken with olive oil cooking spray.
Step 4
Place on the center oven rack and bake for 20 to 22 minutes, until the chicken has cooked through and the crust has browned. Remove from the oven and let cool for 5 minutes before serving.
