Ingredients

FOR THE BLONDIE BATTER
1sweet potato
boiled large
¾ cupunsalted butter
melted
2eggs
large, room temperature
¾ cupsugar
⅓ cuppurpose flour
½ tspbaking powder
2 tspcornstarch
1 tspsalt
1 tspvanilla extract
1 tspcinnamon
1 tspnutmeg
1 cupwhite chocolate chips
FOR THE MAPLE ICING
Instructions
Step 1
Wash and boil sweet potato until fork tender. Peel and mash. Pour 1 cup of mashed potato in mixing bowl and pour in brown sugar and 3/4 cup melted butter. Combine with hand mixer. Pour in white sugar and mix also.
Step 2
Add in 2 large egg and incorporate well. Add in cinnamon, nutmeg, vanilla extract. Mix well.
Step 3
Take a separate bowl for dry ingredients. Add in flour, cornstarch, baking powder and salt. Mix and slowly pour into wet batter and blend until smooth.
Step 4
Add in white chocolate chips and fold over into batter, grease 8x8 pan. Heat on 350 degrees for 35-40 mins. Let it cool down completely, this is very important.
Step 5
To make icing, mix all ingredients from above in a small bowl. Reach desired consistency. Add whatever toppings you like! Enjoy!
