Instructions

Step 1
Combine dry ingredients.
Step 2
Grate cold butter or cut into small cubes and work into dry ingredients until rough crumbs form (you want little chunks of butter still visible).
Step 3
Add milk, egg, and vanilla and stir with a fork until a quite shaggy dough form—do not over-mix or you’ll have dense scones!
Step 4
Add blueberries then cut in half and place on top of the other half, then cut in half again and place on top of the other half again (this is to form layers). Roughly form into a circle. Refrigerate until firm.
Step 5
Preheat oven to 200 degrees Celcius (392 F), cut dough into triangles then brush with milk and sprinkle with coarse sugar.
Step 6
Bake for 18-25 minutes or until golden brown.
