Salad Ingredients
1 cupGrape tomatoes
halved
4 cupsgreen leaves
assorted, packed
2 cupsMarinated artichoke hearts
canned, cut into halves
¼ cupCapers
¼ cupred onions
cut into thinly slices
Dressing ingredients
Instructions
Step 1
In a large bowl, combine all the salad ingredients.
Step 2
Add all of the dressing ingredients to a small bowl and whisk until all of the ingredients come together. You can also add all of the ingredients except the oil, then whisk while adding the oil in a stream, which can help with the emulsification.
Step 3
Drizzle the dressing over the salad and toss to coat. The salad should be lightly dressed, not drowned. Taste for seasoning, adjusting with more salt and pepper as desired.

Step 4
If you’re not serving your vinaigrette right away, you may have to whisk it again right before serving.
Step 5
You may add Dijon mustard and honey help emulsify the dressing, which keeps it together longer.
