Step 1
1. Make the shortbread cookie layer: whisk together the flour, salt, corn starch, and powdered sugar. Press into greased pan (glass or ceramic preferred) and bake at 350 F for 20-25 minutes until edges are golden brown.

2. Make lemon mixture while shortbread is baking: whisk together melted butter, sugar, eggs, and lemon juice. (Optional: add 2 tablespoons of flour for structure.) Pour through sieve to remove any clumps.
Step 3
3. Final bake: as soon as the shortbread cookie layer is done baking, pour the lemon mixture directly into the pan without cooling. Bake at 350 F for 25-30 minutes until the lemon mixture is just set.
Step 4
4. Serve: allow to cool before slicing. Can optionally dust with powdered sugar for garnish.
