Instructions
Step 1
- Mix flour, yeast, sugar and salt in one big bowl.
Step 2
- In another smaller one, mix water, milk and egg.
Step 3
- Slowly whisk the wet mix into the dry mix until fully incorporated. Now knead for about 10 min until it becomes shiny and smooth.
Step 4
- Leave to rest in a lightly oiled bowl either overnight in the fridge (+-8 hours) or room temperate (+-1 hour), until it has doubled in size. (Overnight yields the best results)
For hot dog buns
Step 5
- Cut the dough into 10 equal sections. Knead each portion for a few seconds to form a smooth ball and roll each portion into a rectangle of about 5 inches long and 4 inches wide.
Step 6
- Roll up tightly into a cylinder and tuck in the sides. Cover and let rise for about 45min in a warm place before baking.
For burger buns
Step 7
Cut the dough into 8 pieces and roll them into smooth balls. Again cover and leave to rise for about 45 min before baking

(Sprinkle some sesame seeds on top after applying the egg wash)

- Pre heat the oven to 180C.
Step 10
- Brush the rolls with the egg wash and bake in the oven for about 15-20min.
Step 11
- Remove from oven and let the buns cool down enough.
