Grandma's Irish Soda Bread

Made exact recipe. It was perfect and delish. Nice crust and soft and crumbly inside

Used a whole stick of butter and added some water.

The bottom cooked too quickly I moved up the rack to finish, but the middle was under cooked. The taste was okay

Not sure where I went wrong with the measurements but ended up needing to add a lot more extra flour. Need to make sure I make thin enough so bakes evenly. Tastes like a scone.

My kids really like this. I sub soy milk with 1.5 TB of vinegar added for the buttermilk and use plant based butter (Earth Balance) to make the recipe vegan. I also make it with bread flour instead of AP and add an extra tsp of baking soda to increase the rise and bake it in a cast iron pan for 55-60 minutes at 400F

Moist interior, good crumb, very tasty bread

No raisins for me. Buttered and seared sliced were awesome. I think this would be in the same tier as challah bread for French toast...
