Preheat your oven to 250°F (120°C). • Pop the popcorn kernels in an air popper or in a large pot with a bit of oil over medium-high heat. • Spread the popped popcorn evenly on two large baking sheets lined with parchment paper. • In a large saucepan over medium heat, melt the butter. • Add the brown sugar, corn syrup, and salt to the melted butter, stirring constantly until the sugar is dissolved. • Increase the heat to high and bring the mixture to a boil, stirring occasionally. • Let the mixture boil for 5 minutes without stirring, then remove it from the heat. • Add the vanilla extract and baking soda to the mixture, and whisk until well combined. • Pour the caramel mixture over the popcorn, using a spatula to toss the popcorn until it is well coated. • Bake the caramel popcorn in the preheated oven for 45 minutes, stirring every 15 minutes. • Remove the popcorn from the oven and let it cool for at least 10 minutes before serving. • Enjoy your homemade caramel popcorn! Note: You can add nuts or other toppings to the popcorn before pouring the caramel mixture over it, if desired.
