Instructions
Step 1
Preheat oven to 425°F.
Step 2
Beat eggs, milk, green onions, and 1/4 pepper with fork until pure yellow , do not overheat. Add cheese.
Step 3
Cook bacon in 10" cast iron skillet over medium heat 5-7 minutes. Add onion and 1/2 teaspoon salt, cook 5 minutes. Add bread, carefully fold with spatula until evenly coated with oil. Cook bread, folding occasionally, until lightly toasted, 3 minutes.
Step 4
Off heat, fold in egg mix until we'll combined. Gently press down to soak. Put skillet in oven and bake until center is puffed and set, and edges browned and pulled slightly away from sides, 12 - 15 minutes. Cool 5 minutes, serve.
Step 5
VARIATIONS: SPINACH AND GOUDA - Substitute Smoked Gouda for cheddar and 1 pound spinach for green onion. Cook spinach briefly, add 1 teaspoon thyme.
Step 6
GARLIC AND SWISS - Substitute Swiss for Cheddar, add 1 clove garlic with onion.
Step 7
BOURSIN AND ASPARAGUS - Substitute Boursin for Cheddar. Cook 1 pound asparagus cut in 2 " pieces with 2 tablespoons water in microwave 2 minutes.
Step 8
SWISS AND SAUSAGE - Substitute Swiss for Cheddar and 8 ounces sausage and 1 tablespoon butter for bacon. Add 1 teaspoon thyme.
Step 9
PEPPER JACK - Use Pepper Jack cheese.
Step 10
VEGETARIAN - Use 4 tablespoons butter.
