Nana’s Potato Roll Recipe According to Baaga

Refrigerator Rolls. Passed on to you, Laura, from me-Baaga, and from Nana--Helen Bicking, from here mother, Laura Blue.
NOTE: Christmas 2022, extra potatoes were added accidentally (3 cups...?), Which led to ~9 cups flour.

Instructions
Step 1
Put yeast in the lukewarm water to dissolve. Set aside to cool.
Step 2
Cook potatoes, drain off water, reserving 2 cups. While water is still hot, add shortening, sugar and salt.
Step 3
Mash potatoes and add to this mixture.
Step 4
When cool, add eggs, yeast mixture, and flour to stiffen.
Step 5
Knead, knead, knead.
First Rise ~ __? hrs
Step 6
Place in tightly covered bowl in refrigerator.
Second Rise ~ 2+ hrs
Step 7
Grease muffin tin before starting the second rise.
Step 8
Take out dough, punch down and make 3 walnut sized balls for each roll. Cover muffin tin. Let rise; approximately 2+ hours.
Bake ~ 30 min
Step 9
350F, middle oven, 30 min.

Baked rolls can be wrapped in foil and frozen.
