These Miso Butter Rolls are a comforting twist on the classic butter roll. They’re delightful to be enjoyed as a breakfast treat, satisfying snack, or a side dish that adds warmth and sophistication to the dinner table. They're infused with the captivating essence of miso–a Japanese fermented delicacy made from soybeans, koji, and salt– and it gives these rolls a rich and savory flavor. The buns are also brushed with a miso butter glaze before baking, which gives them a delicious, golden crust. The rich and versatile flavor profile of these Miso Butter Rolls pairs wonderfully with a range of dishes, from juicy burgers and breakfast sandwiches to grilled meats, roasted vegetables, and soul-soothing soups. No matter the occasion, be it a brunch buffet, a quick snack for little ones, or a dinner gathering, these rolls are guaranteed to be a crowd-pleaser. Tips: Use a good quality miso paste. There are many different types of miso paste available, so it is important to choose one that you like the flavor of. Bake the buns until they are golden brown.

Instructions

Step 1
Pour warm milk into the bowl of a stand mixer or in a large bowl. Add sugar and yeast. Stir, and let it stand for about 10 minutes.
Step 2
Add eggs, melted butter, miso paste, umami seasoning, and salt. Mix over medium speed until thoroughly combined.
Step 3
While the mixer is still on, gradually add 3 cups of flour. Continue adding a little flour until the dough forms and begins to pull away from the bowl.
Step 4
Adjust the mixer speed to low, add 1 cup of flour slowly while kneading for 5 minutes. The dough should now be a little sticky and a little springy.
Step 5
Shape the dough into a ball, place into a bowl and drizzle the dough in olive oil. Cover bowl with a damp towel and allow it to rise for 1.5 hours or until it has doubled in size.
Step 6
Roll the dough onto a very lightly floured or non-stick surface and cut into 6 portions for bun size or 10 portions for dinner roll size. Stretch the outer edges of each piece and pinch into the bottom to form a ball. Arrange the balls seam side down onto a baking sheet.
Step 7
Cover the baking sheet and allow the dough to rise for 1 hour or until puffed.
Step 8
Preheat the oven to 350 F. In a small bowl, mix 1 tablespoon of miso with 1 tablespoon of melted butter. Crack 1 egg into a small bowl, add 1 tablespoon of water and scramble well. Brush the top of the rolls with the miso butter, then the egg wash. Bake for about 15-20 minutes, or until golden brown on top.
Step 9
Serve buns warm. Enjoy!
