Bacon & Pimento Cheese Pizza

Topped with homemade pimento cheese and crumbled bacon, each bite of this pizza melts in your mouth for a satisfying combination we didn’t know could be oh-so-good.

Fifteen minutes before baking, place one rack at the bottom of the oven and one in the top position. Preheat the oven to 475 degrees F.
Step 3
If you are going to use "real" bacon for the recipe, cook it now in the same pan that you will use to make the pizza, then crumble. The flavor will make an awesome crust. Otherwise, preheat your pan to medium heat.
Step 4
Pour 1 ½ tablespoons olive oil into your cast iron skillet. Coat the cooking surface and sidewalls with oil.
Step 5
Shape the dough roughly into a round. Transfer the dough to the pan and turn it once to coat with olive oil. Press the dough to the edges of the pan.

Spread sauce on crust, then sprinkle mozzarella evenly over the top.
Step 8
Add small spoonfuls of pimento cheese over the pizza and sprinkle with bacon.
Step 9
Be sure the bottom of your crust is golden brown before continuing. Otherwise, heat for another minute or two on the stove. Then, bake the pizza on the top rack for 10-14 minutes until the cheese is bubbling and the bottom and edges of the crust are golden brown.
Step 10
Remove the pizza from the oven. Carefully run a spatula around the edge of the pizza and the side of the skillet to prevent sticking. Cool for about 5 minutes in the pan. Transfer to a cooling rack or cutting board. Cut into 8 slices (2 per serving). Serve on the cutting board or return to the pan for presentation.
