35mlalmond milk
160gfat free yogurt
85mlsugar free maple syrup
5 Tbsmonk fruit sweetener
or any
110gcarrot
grated
180gself raising flour
½ tspbaking powder
1 tspcinnamon
¼ tspnutmeg

Instructions
Step 1
In a large bowl combine the eggs, milk, maple syrup and yogurt
Step 2
Add the flour, baking powder, sweetener, cinnamon and nutmeg. mix well
Step 3
Add the grated carrot and stir through
Step 4
Line a loaf pan and pour the batter in
Step 5
Bake at 175C for 35-45mins (may need more)
Step 6
Once bake, let it cool and frost with the cream cheese protein pot (mix some lemon zest in to it) alternatively you can use equal parts low fat cream cheese and thick yogurt with a bit of sweetener and lemon zest
Step 7
Cut the loaf into 10 slices (store in the fridge)
