60gbutter
1 tablespoongolden syrup
1 cupself raising flour
1 ½ teaspoonsground ginger
½ cupsugar
½ cupdesiccated coconut
1egg
lightly beaten
Lemon Icing
Instructions

Step 1
Grease a 28cm x 18cm lamington tin well and/or line with baking paper.
Step 2
Melt butter and golden syrup over low heat. Remove from heat and allow to cool slightly.
Step 3
Sift flour, ginger, sugar and coconut into a bowl. Add lightly beaten egg and stir.
Step 4
Pour in melted butter and syrup. Mix well. Press into base of prepared tin.
Step 5
Bake in a moderate oven for about 25-30 minutes or until lightly browned and firm. Cool in pan.
Lemon Icing
Step 6
Sift icing sugar into small heatproof bowl.
Step 7
Soften butter. Stir butter, rind and enough juice to icing sugar to make a stiff paste. Stir over hot water until spreadable.
Step 8
Spread icing over slice and leave to set.
