Step 1
Preheat oven to 375 For jalapeños- seed and dice 2 jalapeños, leaving some for topping cut thin slices.

Grate 1 cup sharp cheddar cheese.
Step 3
Mix dry ingredients in one bowl: corn meal. flour, baking powder, white sugar, and salt.
Step 4
In a separate bowl, melt 1/2 cup butter, then add buttermilk, and 1 egg. whisk until combined.
Step 5
Add wet mix to dry mix bowl and use a spatula to mix well.
Step 6
Add diced jalapeños and 1 cup shredded cheese.
Step 7
Grease a muffin tin and scoop mix into muffin tin. Should make about 12! Sprinkle with remaining cheese and jalapeños.
Step 8
Bake for 25 minutes. Let rest for 10 minutes and enjoy!
