Bacon Wrapped Stuffed Chicken

This recipe is one of my favorites! Very delicious all in one meal. I have created a spicy version for those that like a little kick, and it's a keto friendly recipe!

Instructions

Step 1
Preheat oven to 350 Steam frozen broccoli with butter, drain, and set to side
Step 2
In separate bowl add cream cheese, mayonnaise, ranch seasoning, salt, pepper, cheese, bacon bits, Cajun seasoning, paprika. Mix well.
Step 3
Combine broccoli with mixture
Step 4
Slice a pocket into the thicker side of chicken breast. Be careful to not cut all the way through.
Step 5
Cut aluminum foil into large squares to wrap the chicken breast.
Step 6
On the individual foil square lay out 2-3 slice of uncooked bacon. Center the chicken breast on the bacon .
Step 7
**Optional Spicy version: layer the inside of the chicken with jalapeno slices. About 6 slices of jalapeno peppers. Leaving 2 sliced for top garnish.
Step 8
Spoon in the mixture to the inside of chicken breast. **Spicy version: add the Cholula Green Pepper Sauce now, in personal amount desired
Step 9
Fold the bacon over the chicken breast in a criss cross pattern. **Spicy version: top with 2 jalapeno slices
Step 10
Fold the aluminum foil over the chicken. Place on baking sheet. Bake at 350 for 35 minutes.
Step 11
Turn up oven to 425, remove foil from chicken, bake for another 25 minutes, or until the bacon is crispy.
Step 12
***** if you have leftover mixture, freeze for later use.
