Instructions
Preheat oven to 350°F
Step 1
Cover 2 baking sheets with parchement paper. (You will only be able to bake 4 cookies at a time.)
Step 2
Using stand mixer, mix together butter & sugars until light & fluffy.
Step 3
Add eggs & vanilla, mixing until thoroughly combined.
Step 4
Add flour, cocoa, cornstarch, salt, & baking soda; mix just until chocolate cookie dough forms. The dough will be soft. (You may need to put your mixer on a higher power to mix dough.)
Step 5
Measure 1/4C cookie scoops; form half into balls & flatten remainder into disks.
Step 6
In each cookie dough ball, use thumb to create pocket in middle. (Almost like a tiny cup.) Add some hot fudge into pocket and place on baking sheet.
Step 7
Place a piece of flattened cookie dough on top of cookie dough “cup”; seal edges.
Step 8
Repeat with remaining cookie dough. Place 4 cookies per tray. (They will spread on cookie sheet.)
Step 9
Bake (13-14 min.) (Cookies will start to crack & crinkle, it will spread. You will know it is done when centers no longer look wet.) Remove from oven.
Step 10
Cool cookies on cookie sheet (10 min.)
Step 11
Sprinkle with powdered sugar; serve warm.
