Ingredients

1 ½ cupyellow cornmeal
½ cupall purpose flour
½ cupwhite sugar
1 tablespoonbaking powder
½ teaspoonkosher salt
1 cupbuttermilk
0.5 CupUnsalted Butter
melted & cooled
2eggs

¼ cupsour cream
Honey Butter
Instructions
Step 1
Preheat oven to 400F
Step 2
For dry ingredients, in a large mixing bowl combine and whisk together Cornmeal, Flour, Sugar, Baking Powder, and Salt.
Step 3
For wet ingredients, in a separate bowl, lightly beat egg then combine and mix with Buttermilk, Cooled Melted Butter, and Sour Cream.
Step 4
Add wet ingredients mixture to dry bowl and mix together. Be sure to not over mix. Let Batter rest for about 10-15 minutes.
Step 5
Lightly spray a 12-cup muffin baking tray with non-stick cooking spray. Fill each muffin cup and bake for about 16-18 minutes. To test to see if the muffins are done, you can place a toothpick through the center of one, if comes out clean the muffins are done baking.
Step 6
For Honey Butter, combine melted butter and honey. Once muffins are done baking, immediately brush Honey Butter over each muffin.
