Instructions
Step 1
Heat oil in a small frying pan. Add the chorizo, chilli flakes and spring onions and fry for about 2 min, stiring regularly.
Step 2
Pour in the tomatoes and bring to the boil, then simmer for 1 min. Reduce heat to medium to low and use the back of a spoon to create 2 dips in the mixture.
Step 3
Crack an egg into each dip, sprinkle it parmesan over the eggs and Place a lid on top. Simmer for about 5-6 min or until whites are cooked and yolk is at preferred texture
Step 4
Sprinkle with parsley and then eat
