Chili-Topped Sweet Potatoes

One of our fave dishes. I usually add a bit extra hot chilli spice for my partners preference and serve mine with sour cream to bring the heat down. Swapped mince for turkey mince once when I couldn’t get beef and it came out just a well. I bake sweet potatoes in the oven rather than microwave.

Ingredients
2 servings
1 poundlean ground beef
¾ cupwhite onion
finely chopped
½ cupred bell pepper
finely chopped
4cloves garlic
chopped
2 tablespoonschili powder
1 tablespoonground cumin
2 teaspoonsdried oregano
1 teaspoonground coriander
1 x 14 ouncecan diced tomatoes
¼ cupwater
4sweet potatoes
medium
½ cupshredded cheese
such as Cheddar or pepper Jack
Instructions
Step 1
Cook beef, onion, bell pepper and garlic in a large skillet over medium-high heat, crumbling the beef with a spatula, until the meat is browned, 8 to 10 minutes. Stir in chili powder, cumin, oregano and coriander; cook, stirring, for 30 seconds. Add tomatoes (with their juice) and water and simmer for 5 minutes.
Step 2
Meanwhile, prick sweet potatoes with a fork in several places. Microwave on High until tender all the way through, 12 to 15 minutes.
Step 3
Serve the sweet potatoes topped with the chili and cheese.
