Maple Balsamic Chicken with Sweet Potatoes & Broccoli

Roasting whole sweet potatoes can mean a lot of waiting & staring at the oven door, which is why we’re using a speedy hack, microwaving them instead. They get fluffy & tender in a hot minute—just in time to soak up the sweet & tangy sauce that glazes the chicken.

Instructions

Preheat oven to 450°F

Step 1
Place broccoli florets on baking sheet; toss with drizzle of oil & a pinch of salt/pepper. Roast (15 min.) until crispy & lightly browned.
Step 2
Meanwhile, prick sweet potatoes all over with fork. Put on plate; microwave (10 min.) until very tender.
Step 3
While broccoli & sweet potatoes cook, heat drizzle of oil in lg. pan over med.-high. Season chicken all over with salt/pepper. Add to pan; cook (5 min. per side) until browned & no longer pink in center. Remove from pan & set aside.
Step 4
Add balsamic vinegar to pan; simmer (1-2 min.) until thickened but not completely evaporated. Add 3 tsp maple syrup; simmer (1 min.) until very thick and sticky. Add ½ TBSP butter & stir until melted. Return chicken to pan; toss to coat.
Step 5
Split sweet potatoes down the middle; season with salt/pepper. Top each half with ½ Tbsp butter & sprinkle with pinch of sweet & smoky spice blend. Lightly mash with fork to incorporate.
Step 6
Arrange sweet potatoes on plates with chicken & broccoli. Drizzle with any remaining glaze.
