I don't know the dessert easier than Pavlova! Crisp on the outside with marshmallowy goodness on the inside, topped with cream cheese frosting and fresh berries... Perfection!

Instructions
Step 1
Heat the oven to 90C
OvenPreheat
Step 2
Whisk egg white with a pinch of citric acid(or salt) until they form soft peaks, then start to add sugar slowly, (a bit at a time) and whisk until the meringue forms stiff peaks and looks glossy.
Step 3
Add cornstarch and whisk until combined.
Step 4
Transfer to a piping bag fitted with a large “open star” tip.
Step 5
On an A4 paper draw the circles(around 7cm), using a pen. ( just to mark the shape of our Pavlova)
Step 6
Place the paper on a baking tray and cover with the silicone mat (or parchment paper)
Step 7
Beginning in the centre of each circle you previously drew, pipe circles of meringue in a spiral (3 layers, check the recipe source to see the video).
Step 8
Indent the centre with a spoon to allow room for frosting.
Step 9
Remove A4 paper and bake at 90C for 2, 5-3 hours. Switch off the heat and let them cool completely inside oven.
Step 10
For the frosting, in the large bowl combine icing sugar, cold double cream, and cream cheese. Beat for a few minutes until firm.
Step 11
Pipe frosting onto the meringue and top with your favourite berries and mint.
Step 12
Serve immediately and enjoy!
