Instructions

Step 1
Dust the cheeks in the flour and season. Brown off the meat on all sides and remove to one side
Step 2
Fry the bacon until cooked through and then add the puree, cook for 1 min
Step 3
add the stock and wine, bring to a simmer
Step 4
trim chop the carrots in half lengthways
Step 5
peel the shallots
Step 6
add the beef to the sauce and then add the shallots and carrots, thyme and bay leaf
Step 7
cook on low for 7 hrs
Step 8
serve with mustard mash
