Instructions

Step 1
Preheat the grill to high. In a large bowl, mix the lamb with the spices, thyme, chilli flakes and plenty of seasoning until coated. Tip the lamb out on to a baking tray in an even layer.
Step 2
Grill the lamb for 8-10 min, turning occasionally, until cooked to your liking.
Step 3
Spread 1 tbsp of Tzatziki along the centre of each wrap. Pile on as much lettuce and cucumber as you like. Divide the lamb, olives and mint along the wraps. Wrap up, halve and secure with cocktail sticks, if you like, before serving.
