Instructions

Step 1
Line the bottom and sides of a 9x9 baking pan with parchment paper.
Step 2
In a large pot, melt the butter over medium-low heat.
Step 3
Once butter is melted, add in the packet of instant espresso, and mix until combined.
Step 4
When the butter and espresso are combined, add your marshmallows and stir only until completely melted, otherwise the mixture will become too hard.
Step 5
Remove the pot from the heat, pour in the vanilla extract, and stir.
Step 6
Quickly begin to add in your cereal, stirring until everything comes together.
Step 7
Move your mixture into the 9x9 pan, and lightly press the cereal into the pan. Being gentle is crucial in this step to ensure your treats aren’t hard and dense.
Step 8
Cover and allow treats to set and cool for at least an hour, refrigeration is not recommended.
