These are rich and chewy. You can dip in bittersweet, semi sweet or milk chocolate.

Step 1
Heat oven to 350
Step 2
Line a square pan with parchment paper
Step 3
Beat butter, sugar and vanilla with electric mixer until light and fluffy
Step 4
Stir in flour and pat down in pan and bake about 20 minutes, just till starts turning color
Step 5
Let crust cool and make caramel by placing butter, corn syrup ,sugars and cream in heavy 2 quart pot. Mixture will boil high so you need a big pot

Cook over medium heat till sugar is melted, the turn to medium high and boil till reaches 245 degrees, about 20 to 30 minutes. Occasionally brush down sides of pan with pastry brush dipped in water.
Step 7
Remove from heat and stir in vanilla.
Step 8
Allow to cool completely, if not setting fast enough, you can place in refrigerator for a few minutes. After cooled, pour over cookie layer.
Step 9
When set, melt chocolate with oil at 15 to 20 second intervals, till smooth and silky.
Step 10
When caramel is set, remove bars from pan.
Step 11
Remove bars from pan and cut into 16 bars. With fork dip into chocolate, allow to drip and place on parchment paper. You can also just put chocolate on top, instead of dipping.Let set, can sprinkle with sea salt and drizzle with left over chocolate.
