Instructions
Step 1
Take steaks out of fridge and allow it to come to room temp, about 60 minutes.
Step 2
Pat dry with paper towels.
Step 3
Trim off fat on edge.
Step 4
Generously season both sides with salt & pepper.
Step 5
Preheat cast iron or heavy bottom skillet on medium heat for 2 minutes.
Step 6
Render fat for 5 minutes. Remove solid. (Or skip this step and use 1 Tbsp neutral oil instead).
Step 7
Turn heat up on high. When begin to smoke, add steaks. Make sure not over crowding the skillet.
Step 8
Sear steaks on each side, 3 minutes each. Do not move steak when searing. Turn only once.
Step 9
Add green onions & butter. Reduce heat to medium. Base steaks with dripping continuously for about 1 min.
Step 10
Add garlic. Base steaks with dripping continuously for about 30 seconds.
Step 11
Promptly transfer steaks to a plate.
Step 12
Optional: Check with a meat thermometer. For medium rare steak, internal temperature should read between 130°F and 140°F.
Step 13
Allow steaks to rest for 5 - 10 minutes.
Step 14
Slice steaks into thin strips, pour dripping over and enjoy!
