Instructions

Step 1
Start by selecting your steaks. Ribeye, sirloin, or New York strip all work well, ideally 1 to 1.25 inches thick. Pat the steaks dry with paper towels—this step is important because removing surface moisture helps the outside caramelize better in the air fryer.
Step 2
Drizzle both sides of the steaks with olive oil and rub it in gently with your hands. Then season generously with salt, black pepper, garlic powder, and smoked paprika if you’re using it. You can also customize the seasoning to your taste—try adding onion powder, steak seasoning, or even a touch of cayenne for heat.
Step 3
While the steaks sit for a few minutes to absorb the seasoning, preheat your air fryer to 400°F (200°C) for about 3 to 5 minutes. Preheating helps achieve that nice seared crust. Once preheated, place the steaks in a single layer in the air fryer basket, making sure they don’t overlap. If your air fryer is small, cook them in batches to avoid crowding.
Step 4
Air fry the steaks for 10 to 14 minutes, depending on your preferred doneness. Flip them halfway through the cooking time using tongs. For medium-rare, aim for around 10–12 minutes; for medium, go closer to 12–14. Use a meat thermometer to check the internal temperature if you're unsure—135°F for medium-rare, 145°F for medium.
Step 5
Once done, transfer the steaks to a cutting board and loosely tent with foil. Let them rest for 5 minutes before slicing. This step is crucial—it allows the juices to redistribute throughout the meat, resulting in a more tender and flavourful steak.
Step 6
Optionally, top with a pat of butter and fresh herbs for a restaurant-quality finish.
