Instructions

Preheat oven to 350°F

Step 1
Lightly oil & flour a 6”x3” mini loaf pan (or pan that fits 2 C) or line with parchment paper.
Step 2
In bowl, whisk together flour, coconut, baking powder, & salt. In another bowl, whisk sugar with the yogurt, oil, egg, & coconut extract. Fold dry ingredients into wet, just to blend.
Step 3
Pour batter into prepared pan. Bake (50-60 min.) until top is golden brown they pass the toothpick test.
Step 4
Cool in pan on wire rack (30 min.), remove from pan & cool completely on wire rack.
