Step 1
Cut all veggies into big chunks, skin on.
Toss all veggies in olive oil, spice and salt and roast until pumpkin is soft.
Once roasted, put all veggies into a large soup pot and top up with the stock and boil for 45 mins.
Blend until smooth, add more stock if needed.
