Ingredients

2 tablespoonsextra virgin olive oil
I prefer using roasted garlic olive oil
1onion
medium, chopped
¼ cuppoblano pepper
2cloves garlic
chopped
1 lbokra
cut, fresh
½ teaspooncayenne pepper
salt
to taste
2 teaspoonssmoked paprika
1 teaspoondried oregano leaves
2 teaspoonsred wine vinegar
1 x 14.5 ozcan diced tomatoes with basil, and garlic & oregano
Instructions
Step 1
Place olive oil in a large skillet
Step 2
Add onion and garlic, sauté for 1 to 2 minutes
Step 3
Add okra, cook on medium-high heat until lightly brown
Step 4
Add red wine vinegar and other seasonings
Step 5
Add tomatoes, cover and cook until tender when pierced with a fork
