Instructions
Step 1
Preheat oven to 390° F.

Step 2
Preheat Cast Iron or oven safe skillet to medium high heat.


Step 3
While oven and skillet are heating, pat dry chicken.

Step 4
Using a small knife, remove most of the skin from the breast leaving it attached at one side.


Step 5
In a small bowl, mix together, lemon zest, fresh herbs, smoked paprika, and mayonnaise.


Step 6
Spread mayonnaise mixture onto the breast of the chicken and cover mixture with the skin flap.

Step 7
Cover the chicken with olive oil and liberally salt and pepper on both sides.
Step 8
Place chicken face down onto preheated skillet and put into the oven for 15 minutes.

Step 9
After 15 minutes have passed, flip chicken and return to oven for 25 more minutes or until chicken reaches 160° F.


Step 10
Remove chicken from skillet and allow to rest for 10 minutes prior to serving.

Step 11
While chicken is resting, return skillet to medium heat on stove top.

Step 12
Deglaze skillet using chicken stock making sure to scrape up any brown bits.

Step 13
After broth reduced by half, add minced garlic to pan sauce and serve alongside chicken.
