Pork Chops with Watermelon Feta Salad
Grilled, Chile
6pork chops
1 tablespoonchili powder
1 tablespooncoriander
1 teaspoonoregano
4garlic cloves

2limes
juice and zest of

1juice of lemon
6 cupswatermelon
cut into 1/2 inch cubes
1 cupfeta cheese
crumbled
1 cupKalamata pitted olives
halved
0.5sweet onion
small, diced
1 cupmint
freshly chopped

COOKING INSTRUCTIONS: In a large bowl, add pork, chili powder, coriander, oregano, garlic, lime juice and zest, 2 tablespoons olive oil, and sea salt and freshly ground pepper to taste. Marinate in the refrigerator for 30 minutes. Heat an indoor or outdoor grill to medium-high heat. Grill pork over medium-high heat for 7 to 8 minutes on each side until cooked through. In a large bowl add, lemon juice, watermelon, feta, olives, onion, mint and sea salt, and freshly ground pepper to taste. Serve grilled pork chops with watermelon salad.
