Step 1
Prepare the potatoes: peel and slice into thin strips. Rinse well and soak in cold water for a few minutes. Pat dry with a tea towel and lay out for 20-30 minutes to ensure they are dried out.
Step 2
Preheat the oven to 400 F. Dice Brussels sprouts and chop carrots. Toss in olive oil, a little salt and some pepper to taste.
