BBQ Honey Crispy Chicken Sandwich

Instructions

Step 1
I. If oven baking the chicken breast, preheat your oven to 180°C (160°C fan/350°F/Gas 4).

2. Cover the chicken breasts with cling film and bash to 2-3cm thickness. Coat the chicken breasts all over with garlic granules, smoked paprika, salt and pepper.

3. In a bowl, break up the cornflakes into smaller pieces using your hands, then pour half the cornflakes onto a plate. Separate the egg and add the egg white to a medium bowl. Dip one chicken breast in the egg white, then lay flat onto the plate with the cornflakes. Flip the chicken over to cover the other side in cornflakes, pressing the cornflakes firmly into the chicken breast to make sure it's evenly coated all over. Repeat this process with the remaining cornflakes and chicken breast.

4. Place the coated chicken breasts on a lined baking tray, spray with a few sprays of low-calorie cooking spray and bake for 25 minutes. If cooking in an air fryer, place the chicken breasts in the air fryer basket, spray with a few sprays of low-calorie cooking spray and air fry at 190°C (375°F) for 15-20 minutes.

5. Heat the BBQ honey sauce ingredients in a pan over a low heat for 3-4 minutes. Once the chicken breasts are cooked, dip them in the sauce until coated all over.
Step 6
6. Build your sandwich. Lightly toast the brioche buns and add the mayonnaise, lettuce and chicken.
