Instructions

Step 1
Melt chocolate and set on the side to cool
Step 2
Using a mixer with the whisk attachment beat Aquafaba for 10 minutes adding the Erythritol (can use icing sugar instead), vanilla extract, salt, and zest beating continually until it becomes thick and creamy like meringue
Step 3
Gently fold the cooled chocolate in the creamy aquafaba, using a spatula.
Step 4
Divide the mousse in 6 serving bowls and refrigerate until ready to use.
Step 5
Serve with fresh berries.
