Step 1
Whisk together all of the honey chipotle marinade ingredients in a shallow dish. Add chicken breasts to the marinade and allow to sit in the refrigerator for 1 hour.
Step 2
When ready to cook, heat a large non-stick skillet over medium-high heat. Add chicken and cook, undisturbed for 3-5 minutes, or until nicely browned on one side. Turn chicken over, cover, and reduce heat to medium. Cook for approximately 4-6 minutes depending on thickness of chicken, until cooked through. Remove chicken from the skillet and allow to rest 5 minutes covered before slicing. Serve in salads, taco bowls, wraps… and enjoy!
