1. Preheat the oven to 160˚C. Line a 20x20 pan with parchment paper / baking paper.

2. Sift together the all purpose flour, cocoa powder and salt into a small bowl. Put aside for later.

3. In another bowl, use an electric hand mixer to whip the sugars and eggs until tripled in size and fluffy (2-3 minutes). Add in the olive oil once it has a fluffy consistency, and continue to mix until fully combined.

4. Add in the dry ingredients and mix together using the mixer until fully combined and fluffy.

5. Pour the mix into the pan that has been lined with baking paper, and place into the oven for 45 minutes. Depending on your pan size, you may find you need to leave it less, so check after 30 mins that the inside is cooked.

6. Once the brownies are done, take them out and leave them to cool in the pan until they are slightly warm. While they cool, melt the chocolate. In a seperate bowl.

7. Pour the melted chocolate on top of the brownies and leave to cool until the chocolate is no longer runny. Cut into 12 equal pieces, and either serve immediately, or place into tupperware for later.
