Step 1
This recipe make 4 parcels, for each one take two sheets of tinfoil lay one on top of the other (this helps regulate the heat the chicken is cooked at), arrange the washed and prepared vegetables evenly over the 4 sets of tinfoil and season with salt and pepper, take the chicken breast and remove the skin season and place on top of the vegetables with the bay leaf tucked underneath. Warm the chicken stock if it is cold and pour a little over each chicken, brush the opposite side of the tinfoil with butter but making sure not to butter the sides if the parcel otherwise the parcel wont seal properly.
Step 2
To seal the parcels brush the edges with egg wash and fold them over neatly then place the on the embers of your bonfire for 20-30min ( while you are watching fire works!)
