Ingredients
6 servings
300gboneless skinless chicken breasts
3 cupschicken broth
3 cupswater
250 gramsspinach ricotta tortellini
1onion
diced
3carrots
medium, peeled and sliced
3stalks celery
sliced
2 teaspoonsfresh ginger root
minced
1 teaspoongarlic
minced
½ teaspoonsalt
½ teaspoonpepper
½ teaspoondried thyme
¼ cupfresh parsley
chopped, for garnish
Instructions
Step 1
Chop the onion, into a large saucepan along with the olive oil. Sauté over medium-high heat for 5-7 minutes until wilted.
Step 2
Chop the celery, carrots and minced garlic, ginger then add them to the saucepan, Give it a quick mix, cook for a couple minutes.
Step 3
Add the chicken broth and season (salt, pepper & thyme) Increase the heat to high, and once it starts to boil, reduce the heat to a simmer and let it cook for an hour or until the chicken well done.
Step 4
Add the tortellini and cook for 10-15 minutes more or until they are puffy and heated through.
Step 5
Season with salt & pepper as needed and garnish with the chopped parsley. Serve immediately.
