Lemon Chicken Orzo Soup

**You can use chicken thighs if you prefer.
**You may need to use more chicken broth to leftovers as the orzo soaks it up.

Instructions
Step 1
In a large soup pot, saute celery, carrots and onion with butter and oil over medium-high heat for 5-7 minutes.
Step 2
Stir in garlic and cook for 30 seconds, then add flour and cook another minute.
Step 3
Pour in the chicken broth and stir until the flour has dissolved, then add seasonings and chicken. Bring the soup to a boil.
Step 4
Cover with lid slightly opened and reduce heat. Simmer 15 minutes.
Step 5
Stir in orzo and cook for another 10 minutes or until orzo is softened. (I keep the lid off and stir often to avoid the orzo from sticking to the bottom of the pot.)
Step 6
Remove chicken from the pot and cut into pieces. Return to pot and add lemon juice, parsley and salt and pepper to taste.
