Pumpkin Dal Omelet with Feta

Ingredients

4 eggs, whisked thoroughly

whisked thoroughly
½ cuppumpkin dal
or slightly more & pureed if desired

Instructions

Step 1
Whisk the eggs, do not add any fluids
Step 2
Spray an omelet pan & add eggs, evenly spread.
Step 3
Heat egg mixture until almost set.
Step 4
Spread the pumpkin dal over the eggs. Cook until the eggs are set and the dal is warm.
Step 5
Serve with sprinkled feta cheese.

Note:

Step 6
I used a microwave omelet maker. I placed 2 eggs on each side of the pan, microwaving at 70% power for 1-minute intervals, checking on how the eggs were setting at the end of each interval. When almost set, I added the pumpkin dal to each side & microwaved for another minute on 100% power.
