Vermont Curry with Tofu

This recipe is based on Japanese Curry bouillon cubes. It is usually made with meat, but we're using tofu.

Ingredients

1.5 lbonions
1 lbpotatoes
8 ozcarrots
0.5 boxJapanese Curry bouillon cubes
like Vermont Curry or Golden Curry
1 lbextra firm tofu
cubed
3 TBSPCornstarch
½ tspsalt
½ tsppepper
5 ¾ cupsWater
Instructions
Step 1
Dry the tofu cubes. Mix the cornstarch, salt, and pepper
Toss the tofu in the mixture.
Heat 2TBSP oil in pan.
Pan fry at medium heat till golden or spray with oil and bake in airfyer for 20 minutes at 400 degrees. (Alternatively, if the tofu was premarinated, skip the first 3 steps and go straight to cooking tofu.) While tofu us cooking, heat 2 TBSP oil in a pot, add vegetables and saute till onions are brown. Add 5 3/4 cups water and simmer for 15 minutes.
Remove from heat and add curry sauce cubes. Stir till dissolved. Simmer till it thickens (10 minutes)
Add tofu. Mix gently. Serve over rice with a side salad.
