Instructions

Preheat the oven to 400 degrees F.

Clean and peel fresh butternut squash and cut into 1-inch small cubes, transfer to a big bowl. Drizzle with olive oil and maple syrup, then sprinkle the sea salt, ground cinnamon, minced garlic, black pepper and rosemary over the top. Toss to coat, divide between the two baking sheets, discarding any excess liquid with that collects at the bottom of the bowl. Spread the squash cubes in a single layer on the prepared baking sheets (apply a simple layer of olive oil or use butter spray beforehand), making sure that they do not overlap.
Step 3
Place baking pans in the upper and lower thirds of your oven and bake for 20 minutes. Remove pans from the oven, flip the cubes with a spatula, then return to the oven, switching the pans’ positions on the upper and lower racks. Continue baking until squash is tender, which takes about 30 additional minutes. Remove from the oven and sprinkle the rosemary over the top. Serve warm.
