Instructions

Step 1
In a medium size pot add coconut oil over medium-high heat. Add in chopped onions, bell pepper, carrots, garlic, ginger. Cook for 2 minutes.
Step 2
Add curry paste, cumin, chicken stock, coconut milk, tamari, and lime juice. Reduce heat to a medium-low simmer.
Step 3
In a skillet spray over medium-high heat spray with cooking spray and add in your cubed chicken breast. Salt and pepper both sides and cook until fully cooked, turning once. About 3 minutes on each side.
Step 4
Add cooked chicken directly into pot with curry. Continue to simmer on low for 20 minutes.
Step 5
Serve on top of cauliflower rice or brown rice. Garish with chopped peanuts and cilantro.
