Instructions
Step 1
Preheat oven to 425 degrees
Step 2
peel garlic and put in tin foil. Drizzle with olive oil and salt a pepper to taste. Wrap tightly in the tin foil and roast for 40-45 minutes. Un-wrap and allow to cool.
For The Bread
Step 3
In a large bowl combine roasted garlic, rosemary, yeast, salt and flour, Add the water and stir until the mixture just starts to come together. Cover tightly with plastic wrap and let sit at room temperature for12-18 hours.
Step 4
Preheat oven to 450 degrees and place a Dutch over or heavy-duty skillet.
Step 5
Clean and flour a flat surface and turn the dough out onto the surface and shape into a ball. Be sure to flour your hands as this is a very sticky dough.
Step 6
Place the dough ball into the preheated Dutch oven and cover with an oven proof lid. Bake for 30 minutes covered and 10-15 minutes uncovered.
Step 7
Remove bread from the oven and allow to cool before slicing.
